Responsibilities:
- Report to Director of Amber Restaurant
- Fully responsible for the smooth operation of the wine & beverage program of the 2 Michelin Starred Amber Restaurant and support all other outlets within the hotel related to wine, coffee and tea.
- Establish and maintain a competitive and relevant wine program in line with the culinary directions of Amber and the remaining outlets.
- Persistently maintain an exceptional high level of wine service and correct the unfulfilled elements if necessary.
- Monitor the stock of wines by introducing a proper wine management system, whilst updating wine lists with correct spelling, vintages & prices.
- Manage & create a culture of sustainability.
- Provide professional development to the sommelier teams of Amber & SOMM and lead the teams to achieve departmental goals and exceeding guests satisfaction. Also support other outlets where needed in terms of wine, coffee and tea training.
- Responsible for the procurement direct from Chateau & negociant of wines for the hotels wine programs.
- Support the Amber Director with the marketing and promotion for the Restaurant and taking up special wine, coffee and tea related projects.
Requirements:
- Minimum 8 years’ experience as a head sommelier in a Fine Dining; Michelin Starred and World 50 Best Restaurants.
- Experience in international 5 star luxury hotels is considered an advantage.
- Extensive wine & beverage knowledge is required
- Creative and hands on
- Well organized and structured
- Strong leadership, communication and interpersonal skills, open mind of different culture, friendly, approachable, sociable with strong sense of empathy.
- Motivational with enthusiastic character with excellent listening skills
- Acquire good training and coaching skills
- Good command in English, knowledge in other languages is an advantage
- Asian experience will be considered an advantage
