The Department

Our Catering Department manages one of the largest and most diverse catering operations in Hong Kong. We provide a wide range of catering, sports and recreation facilities for Members and their guests in three Clubhouses. In addition, both Happy Valley and Sha Tin Racecourses have numerous catering facilities used by Members, non-members and corporate organisations for a variety of functions.


The Job
You will:

  • Delivering sales programmes and marketing campaigns
  • Organising regular wine events (including dinner, tasting, winemaker table) and manage the associated logistics and procedures (RFQ, SSP)
  • Managing operating costs at the Wine Shop (including stock management and staff rosters)
  • Assisting the Head Sommelier to develop wine retail plan, events, wine lists and wine-by-glass programmes
  • Demonstrating professional salesmanship during interactions with Members and guests
  • Recommend to members the best possible and suitable wines to complement the food.
  • Proactively soliciting and sharing Members feedback with superiors, peers and subordinates and logging feedback
  • Ensuring that the operation within areas of responsibilities complies with the SOP requirements and all staff are well trained and perform according to the new SOP requirements and standards.
  • Enforcing and implementing the HACCP system and participating in the Clubhouse HACCP Committee
  • Assist management as needed to ensure smooth operation and quality of service

About You
You should have:

  • a minimum of 5 years relevant experience in prestigious hotels or restaurants with 5 years in a same position, plus Broad knowledge of tableside service, food, wine, beer, and liquor.
  • Accredited international wine master certification
  • Minimum of Advance WSET and or Certified Sommelier from the Court of Master Sommelier
  • Good knowledge of all products and specifications (vintages, grape varietals, correct blends,
  • pricing).
  • Interpersonal skills to effectively communicate with all business contacts and team members.
