Restaurant Manager 

Guest relationship

  • Ability to handle guest feedback, rectify situations with a sense of urgency when appropriate.
  • Entertain potential and existing guests and follow up on timely manner should there be any issues.
  • Invite guest feedback during their visit on the premises as well monitor online sentiment, and actively solicits guest feedback to continually build on La Brasserie Brand reputation for outstanding service and dining experience.

Business management

  • Display a pro-active and consistent approach to stock control, cost control and cash control; and meets the relevant targets set out by management team.
  • Act as the “Brand Ambassador" and go-to person for all Media related projects and inquiries; work alongside the Chef de Cuisine to enhance and further develop the offerings, develop yearly business plan and overall strategies.
  • Drive the management program and work alongside the marketing Director, chef de cuisine, head sommelier to explore ways to increase food & beverage sales with unique, creative and relevant offerings.
  • Is fully conversant with Company and Statutory Regulations / Ordinance in Hong Kong with regards to Health & Safety, Food Hygiene, Fire and Licensing, Accounts procedures and HR Policies.
  • Overlooks & Organises team rosters for operations in line with anticipated business levels giving due consideration to strengths and weaknesses of personnel available and ensures that shift information is submitted to payroll on time.
  • Being well verse on current promotions and execution of the efforts with marketing team and have a calendar of events for the Food & Beverage operation in place. You will be responsible to ensure the junior team is also well verse in the material.
  • Have a comprehensive knowledge of the competitor offering and be constantly up to date with the market trends and needs.

Leadership

  • Identifies skill gap and requirements in your team, proactively proposing solutions to Restaurant Manager and driving the agreed upon necessary change.
  • Proactively suggest innovative means to bring the La Brasserie brand to life and increase it’s appeal to potential clients.
  • Create a meetings cadence with your key stakeholders to ensure communication procedures are effective and efficient on a day-to-day basis, so that service standards are not compromised.
  • Maintain good communication & transparency between management and team members across the venues.
  • Coaches team by providing specific feedback to improve performance.
  • Lead & Support Food & Beverage team by attracting, recruiting, training and appraising talent members.

Team management

  • Responsible for the execution of the functional team responsibilities to the La Brasserie standard.
  • Ensuring the supply of labour within your Back of House team at all times.
  • Monitors and ensures smooth operations, including inventory and daily operation requirements are functioning.
  • Monitor and manage a team of professionals, provide supervision and professional development, counselling and coaching.

Head Sommelier

  • In this Managerial role, you’ll work closely with the leaders of HK Operations, restaurant Manager(s), and the Executive chef to maintain an ongoing partnership across the various departments spanning the La Brasserie operation.
  • Minimum 8 years working experience in signature restaurant, preferably with Michelin experience, with at least 5 years in similar capacity responsibilities.
  • With formal WSET or equivalent certification
  • Guest oriented, good communication and a good team player.
  • Proven managerial abilities in people management, strategic planning and decision making.
  • Excellent interpersonal and problem-solving abilities.
  • Strong sense in business acumen and food & beverage market trends.
  • High standards of professional manner with exceptional communication and presentation skills, creativity and an “out of the box thinking" approach is essential.

Assistant Sommelier

  • Making recommendations on food and wine pairings.
  • Ensuring that the wine cellar is fully stocked.
  • Informing guests on the variety of wines available.
  • Understand guests’ needs and deliver excellent service.
  • Assist in restaurant duties as assigned.
  • Certification as a Sommelier (WSET etc.) or degree in hospitality is a plus.

Waiter/ Waitress

  • Assist in daily Floor restaurant operations.
  • Ensure a smooth and efficient service in the assigned section of the restaurant.
  • Maintain a high level of hygiene and quality service standard.
  • Ensure guest satisfaction by providing excellent customer services.
  • Report to Assistant Manager.
